Life is a Bowl of Cherries

Celebrate the July long weekend with a new twist on cherries

Cherry Cornbread

Ingredients:

  • 2 cups (500 mL) corn meal
  • ½ cup (125 mL) pastry flour
  • 2 ½ tsp (12 mL) baking powder
  • 1 tsp (5 mL) salt
  • 2 tbsp (30 mL) sugar
  • 1 ½ cups (375 mL) milk
  • 2 large eggs
  • 5 tbsp (75 mL)butter, melted
  • 1 ½ cups (375 mL) dried tart cherries

Directions:

  1. Mix together the dry ingredients
  2. Mix together the wet ingredients and gently mix into the dry ingredients
  3. Fold in the cherries
  4. Grease and line a 9”x9” square baking pan with parchment paper
  5. Pour in the batter and bake at 400 degrees for 25 minutes

Helpful hint: More sugar can be added for a sweeter cornbread
