Pansy

Pansies (Viola X Wittrockiana) are another edible flower that can vary widely in terms of taste, ranging from mildly sweet to tart. But there’s no doubting their beauty and flexibility in the kitchen. They can be candied using egg whites and sugar, then used to top cupcakes with a flourish of colour. Or, mix a handful of pansy petals into a green salad or a melon salad. For another treat, try their flower cousins, the violets known as Johnny-jump-ups. They’re also a popular edible flower.
