Grilled Potatoes and Onions

Canada is one of the world's biggest exporters of potatoes, so there's no reason not to buy local. Spuds make a delicious side dish to whatever else you are grilling.

INGREDIENTS

6 potatoes, sliced

1 red onion, sliced

1 tsp (5ml) salt

1 tsp (5ml) ground pepper

4 tbsp (60g) butter

Directions

1. Fire up the grill to medium heat

2. Place some of the potatoes and onion in the center, sprinkle with salt and pepper, and dot with butter. Wrap into a flattened square, and seal the edges. Repeat with the remaining potatoes and onion. 

3. Place aluminum wrapped packages over indirect heat, and cover. Cook for approximately 30 minutes, turning once. Serve hot off the grill.

Serves 6.
