Zesty BBQ Corn on the Cob

Corn is in season throughout the summer and into the fall. Pick some up at your local grocer if you live in the city or directly from a farmer if you live in a more rural area. It doesn't get much more local than this Canadian summer staple.

INGREDIENTS

1 tsp (5 mL) chili powder

A pinch of dried oregano and onion powder

Cayenne pepper and garlic powder to taste

Salt and pepper to taste

1/2 cup (125 mL) butter, softened

6 ears corn, husked and cleaned

Directions

1. Preheat grill to medium-high heat.

2. In a large bowl, mix together the chili powder, oregano, onion powder, cayenne pepper, garlic powder, salt and pepper. Blend in softened butter. Spread on each cob of corn, and place each ear onto a piece of aluminum foil big enough to wrap it fully. Wrap like a burrito, and twist the ends to close.

3. Place wrapped corn on the preheated grill, and cook 20 to 30 minutes, until tender when poked with a fork. Turn the corn occasionally during cooking.

Serves 6.
