Swap: Bread-based stuffing for whole grain

Eco-factor: Stuffing built with torn-up bits of stale white bread is so tired. Why not opt instead for a stuffing made from whole grains, such as locally grown wheat berries or wild rice. It’ll pack a more nutritious punch and taste a whole lot better, too. Add seasonal apples, leeks and dried mushrooms (locally harvested) e.g., shiitake, for a flavour boost.
