Swap: Conventionally grown potatoes and other root vegetables for organic ones.

Eco-factor: This year, support a local organic farmer (and spare the pesticides) by buying your root vegetables—including carrots, parsnips, rutabaga, potatoes and sweet potatoes—at a farmers’ market. Chances are, they’ll even cost less than they would at the grocery store. Then chop and roast the vegetables with a little maple syrup for a richly flavoured and colourful medley.
