Grilled Strawberry and Brie

It looks like a sandwich, it tastes like a dessert. Take advantage of Ontario’s uber sweet strawberries with this casual dish everyone will love. Use traditional bread for a sweet touch to a light lunch. Use slices of angel food cake for a unique dessert.

  •   2 slices fresh country bread
  •   4 strawberries, hulled, cleaned and halved
  •   3 oz (75 grams) Gunn’s Hill Artisan Cheese semi firm cheese, sliced thin
  •   soft butter
  •   icing sugar for dusting

Butter the two outsides of the bread slices. On the unbuttered sides, lay slices of cheese, top with strawberries in one layer evenly on the cheese. Top with a second layer of cheese and the second slice of bread, making sure the buttered side of the bread is on the outside. Grill on medium heat until golden brown, about 3 minutes. Flip the sandwich over and grill the other side for another 3 minutes or until golden brown. Serve warm.

Meet a strawberry farmer….

Springridge Farm

Springridge is a beautiful 73-acre farm in rural Milton owned by John and Laura Hughes. Here they grow strawberries and pumpkins and celebrate them both with amazing farm festivals. There is an on-site bakery, gourmet food shop complete with cookbooks, unique table setting items, a children’s play area and special room for private farm parties. On behalf of Her Majesty Queen Elizabeth II, the Honourable Lisa Raitt presented John with the Diamond Jubilee Medal. In return, John produced a limited edition, Diamond Jubilee Jam in honour of the Queen! Try it, it’s absolutely delicious and it’s in limited supply. The farm is a destination for country conviviality and who knows, you just might get a grilled strawberry and brie sandwich! No one misses a trip to Springridge Farm.
