I have been a tad under the weather the last couple of weeks and I must say, this is one if my favorite pick-me-up recipes that I turn to when I need to get going again. It is loaded with healthy ingredients including ripe bananas (a great source of potassium) and crunchy pecans (to fill your protein requirements!) which make it a perfect choice for an energizing breakfast, a mid morning snack or afternoon tea with the ladies. Adding a handful of premium quality chocolate chips will make it a favorite with your hubby and kids too! To make it a truly green choice for your family try using organic baking products, easily located in the organic section of your local store, free range or organic eggs, organic butter and choose organic bananas, pecans and chocolate chips. Ultimate Banana Bread Ingredients 1 ¾ (375 mL) organic all-purpose flour 1 tsp (5 mL) baking powder 1 tsp (5 mL) baking soda ½ tsp (2 mL) organic ground cinnamon ½ tsp (2 mL) freshly ground nutmeg ½ tsp (2 mL) sea salt ½ cup (125 mL) + 2 tbsp (30 mL) unsalted butter, at room temp 1 cup (250 mL) sugar 2 large organic or free-range eggs 4 tbsp (60 mL) buttermilk 1 tsp (5 mL) best quality pure vanilla extract 3 large ripe organic bananas, mashed 1 cup (250 mL) chopped pecans or walnuts (optional) 1 cup (250 mL) best quality semi-sweet chocolate chips (optional) Directions 1. Preheat oven to 350 F. Generously grease a 9 x 5 inch loaf pan. 2. In a small bowl combine flour, baking powder, baking soda, cinnamon, nutmeg and salt. Set aside. 3. Place butter and sugar into the bowl of a food processor fitted with a paddle attachment (or use an electric mixer). Beat until light and fluffy, about 3 to 4 min. Add egg yolks, buttermilk and vanilla and beat well, about 1 to 2 min. Using a wooden spoon, fold through mashed bananas along with pecans or chocolate chips if using. Carefully add flour mixture and fold though until just moistened (do not over blend). Pour batter into prepared tin and smooth top. 4. Bake in preheated oven for 1 hour, or until a skewer inserted in the centre comes out clean. Remove to rack to cool for 5 min and turn out of pan.
