The DeLish Bite

One of my all time favorite meals is a quiche or a tart. Simple, elegant and rustic, all at the same time, it might just be the perfect meal.

Best fruit of summer I have also recently developed a sordid love affair with tomatoes. I've always liked them and use them often in my cooking. But lately, I have become slightly enraptured with them. (Simon would probably use the term obsessed). There are so many reasons that I have come to adore the tomato:

  • The endless varieties available -- think strawberry (my new fav), cherry, grape, heirloom, pear drop, plum, vine ripened, globe, green, beefsteak etc...)
  • Their versatility. Raw or cooked, tomatoes can be eaten, prepared and cooked in a multitude of ways
  • They are a perfect example of a seasonal food. They respond to summer by getting plump, juicy and sweet.
  • Finally, they are supremely good for you -- think of all that lycopene (a powerful antioxidant)

  • Another favourite
Like a tomato, a tart has many attributes which has solidified into one of my long time favorites. Since it's made from simple, healthy and natural ingredients, there are endless varieties (both in the filling and the crust) which you can create. It's a fantastic year-round choice, especially if you are trying to make use of local and seasonal ingredients. Tarts can be be light and fresh in the summer or comforting and rich in the winter. So, as it is summer, I have decided to share with you my favorite warm weather quiche recipe. It is the perfect option for an elegant brunch, simple lunch or light dinner, accompanied by a herby green salad tossed lightly with some lemon vinaigrette... Intrigued?
