Earth Hour and Earth Day are behind us, but global warming is a reality that doesn’t take a break. It’s here with us 365 days a year, threatening our well being and potentially wreaking havoc on our fragile planet. But there’s an empowering choice every single one of us can make at least three times a day that can help mitigate the effects of climate change, air and water pollution, rain forest destruction, soil erosion and deadly diseases. This simple choice of changing what’s on our plates at breakfast, lunch and dinner can reduce global warming by 18% (more than all of transportation combined!). Since the 1950’s, raising beef cattle has destroyed 70% of Central and South American rainforests – a further insult to injury to the global warming crisis. Livestock production also wreaks havoc on our water systems, contributes to top soil erosion and is a factor in some of the deadliest diseases: heart attacks, strokes, diabetes, cancer, osteoporosis, as well as the food borne illnesses such as “Mad Cow” (CJD), bird flu, foot & mouth, E. coli, listeria and salmonella poisoning. Despite these risks, however, most people find the prospect of changing their eating habits intimidating, confusing or just not “doable”. When I first became a vegetarian I have to admit it was hard. The only option outside the home were pastas and carbs, not great for the figure or our overall health.
