Patriotic Canada Day Appetizers

Break out the fireworks and eco-friendly cocktail napkins - it’s time for a celebration!
Canada Day is all about back yard parties and hanging out with friends, so nobody wants to waste time in a hot kitchen or hovering over the BBQ all day - just one of the many reasons why a variety of finger-food appetizers make a great substitute for larger meals or entrées.  

I’m going to show you how to create a Canada Day-themed hors d'oeuvre that’s quick and tasty and colour coordinated too!  Wow your family and friends with this red and white party platter parade, made with one of my favourite in-season fruits, strawberries!


Strawberries are ripe for the picking and what better way to spend time with the family than a morning out at the farm for some strawberry picking? You can also fill your basket with juicy strawberries from the local farmers market.

STRAWBERRY CROSTINI

Preparation Time:
20 minutes
Serves: Approximately 6 people

Crostini

Ingredients:

  • 1 baguette (8 to 10 ounces), sliced 1/4 inch thick (about 60 slices)
  • 3/4 cup olive oil

Instructions:

  1. Preheat oven to 350 degrees.  Arrange baguette slices on two large rimmed baking sheets; brush both sides with oil,
  2. Bake until golden, 15 to 20 minutes, rotating sheets halfway through). Let cool on baking sheets.

Strawberry Topping

Ingredients:

  • 2 cups of strawberries (washed with the stem removed)
  • 1  tablespoon of balsamic vinegar
  • 1 to 2 tablespoons of white sugar (depending on how sweet the strawberries are)
  • 2 tablespoons of fresh chopped basil

Instructions:

  1. Mix all the ingredients together and place them in the refrigerator until ready to use. This topping can be mixed two hours ahead of time.

Cream Cheese spread

Ingredients:

  • 8-ounce container of light whipped cream cheese
  • 2 tablespoons of sugar, you can also use brown sugar
  • 1 teaspoon of vanilla extract
  • 2 to 3 tablespoons of heavy cream or half and half

Instructions:

  1. Mix all the ingredients together and spread it on 16 slices of crostini. Top it with the strawberry mixture and serve.
