Chocolate Strawberry Flapjacks

A healthy twist on classic chocolate flapjacks, this nutrient-dense recipe is perfect for a guilt-free breakfast in bed! It contains one of our favourite products—Genuine Health’s Vegan proteins+ “double chocolate,” a delicious, easily absorbed source of protein with digestive enzymes—that will surely keep you full and satisfied.

Serves: 2

INGREDIENTS

2 eggs, beaten
½ cup oatmeal (uncooked)
½ cup almond milk
1 scoop Vegan proteins+ “double chocolate”
1 tbsp cocoa powder
1 tbsp chia seeds
1 tbsp ground flaxseed
¼ cup strawberries

METHOD

1. In a medium-sized bowl, stir together all ingredients except for strawberries.
2. Let batter sit for 5 minutes to allow chia seeds to absorb liquid.
3. Pour batter into a blender and whirl until smooth.
4. Heat pan over medium heat and lightly coat with cooking spray.
5. Pour desired amount of batter into hot pan.
6. Flip flapjacks when bubbles form or when bottoms are golden.
7. Garnish with strawberries and serve warm.
